Chicken Chili & Cooking Tips

Preparing your meals before your next trip can make your experience even more enjoyable. Who wants to spend time at the campsite cooking when you could be out exploring the area or just sitting back in your chair reading a delightful book? Here are a few ideas that have helped me.

Saving plastic coffee creamer containers and empty mayonnaise jars are great for chopped up peppers & onions or any fixings you might want to use while cooking at the campsite. Craft supply containers work great too. This way you can prepare them before your trip.

I sometimes bake biscuits the night before a trip and put them in a plastic storage bag. Sausage gravy cooked prior to your trip is great the first morning at the campsite. Just heat it up and go or just enjoy a cup of coffee.

One of my favorite times to camp is in the fall, when the evenings are crisp, and a warm bowl of soup is on the menu. Vegetable soup and chili are always an excellent choice, but one of my favorites is Chicken Chili.

I’ve tried several recipes but I always go back to the easiest and best. I have cooked it in a big kettle at the campsite, crockpot or even before the trip and just heated it up. Cooking it in a big kettle on the fire seems to be the “campiest thing to do” LOL. Cornbread, biscuits, rolls, or crackers complete the meal.

McCormick White Chicken Chili Mix is the secret ingredient, but I have altered their recipe a bit.

1. One whole chicken cooked slowly until it falls apart. Cook with frozen seasoning blend package. After it is cooked, I pull the meat off the bone and use most of the broth. Place in a kettle and add the remaining ingredients.

2. 3 - 15.8 ounce cans of Great Northern Beans undrained.

3. 1 - 15.4 ounce can of Chicken Broth.

4. 1/2 teaspoon of Garlic

5. 1/2 teaspoon of Onion Powder

6. Salt & Pepper to taste.

7. 1 package of McCormick White Chicken Chili Mix

Cook until Chili is thickened to your preference. It tastes even better when heated up the next day.
